Coconut Brown Rice with Braised Tilapia and Green Beans
Brown Rice too chewy? The coconut milk makes it go down better, unless of course you don’t like the flavor of coconut, in which case I can’t help you 🙂
Coconut Brown Rice: (Do this first, it takes the longest to cook)
2 Cups Brown Rice
1 Can (unsweetened) Coconut Milk
2 1/2 C Water
salt to taste
Method: Combine Ingredients in pot. Bring to boil and simmer until rice is softened and liquids have evaporated.
Braised Tilapia (Do this while the rice cooks)
1 Ib tilapia filets
1 small onion, diced
1 small green pepper, diced
1 medium tomato, diced, or 1/2 can of diced tomatoes
2 garlic cloves, minced
1 Tablespoon (salt free)fish seasoning
(I buy mine from the spice guy at our local farmer’s market, I’m not sure of all the spices it includes but I’m pretty sure it contains fennel and paprika). If you can’t find something similar, good ol’ Old Bay will do)
2 Tbsp canola oil
salt to your taste
Method:
1. Cut Tilapia into nugget sized pieces and marinate with fish seasoning and salt for 15-20 minutes (or however long it takes you to dice the veggies)
2. saute onions, garlic, tomatoes and green peppers in oil for 5 minutes.
3. Add the Tilapia, mixing with the vegetables. Cover with a lid and let simmer until fish is no longer raw (approximately 7 minutes).
Steamed Green Beans (Do this last)
1 Ib of frozen french cut green beans (or fresh if you have it)
butter, grated Parmesan cheese or any other topping desired. I leave mine un-topped.
Method: Steam in a steamer for 5 minutes, or blanch in boiling water for 3 minutes.
This meal served 2 adults and 3 children with some leftovers.
